ITALIAN-STYLE ZUCCHINI PANCAKES -- i haven't tried this recipe yet, it sounds like it
has a lot of potential.
Ingredients:
4-6 medium zucchinis, shredded
4 eggs
1 medium onion,
chopped
1/4 cup of fresh basil (yum! best when you pick it fresh from the garden that day)
1 tsp. Garlic
Powder
2 cups flour
1 cup of breadcrumbs
1/4 cup olive oil
1 tsp. baking poder
2 tsp. Finely
ground black pepper
Directions:
Shred zucchini, onion in food processor. Combine ingredients to create
a thick batter. Let sit for 15 minutes.
Cook on griddle (medium heat). Serve with sour cream and chives. Freezes well too-- you can heat them up in the
toaster!
